An experience to live from May to September

Every Friday evening from May to September, Clos Corbier opens its doors for a three-hour experience focused on Champagne, local flavors, and fine dining. A cellar tour, tasting workshop, and dinner served in the cellar: this format is designed to kickstart a weekend in Champagne on the right note.

A three-part evening

It all begins in the vineyard. The guide introduces the region's three emblematic grape varieties - Pinot Noir, Pinot Meunier, Chardonnay - before descending into the estate's underground cellars, where bottles are aging. The visit also includes the vat room and the Clos's traditional press.

Next is the tasting workshop: three Champagnes from the two family houses, Champagne Collard-Milesi and Champagne Domaine Méa, presented with their distinct styles and winemaking techniques.

The evening concludes with a Champagne dinner, served in the estate's cellar, or outdoors if the weather is fine. The menu highlights local produce: gougères and Champagne lentil hummus as a starter, Champagne pâté en croûte marinated in marc and local vegetable quiche as a main course, regional cheeses including Langres AOP, and the chef's dessert featuring Reims pink biscuit. The pairings are designed to extend the tasting experience: a Champagne, a Coteaux Champenois, and a Ratafia at the end of the meal.

A format designed for the weekend

The choice of Friday evening is deliberate. This experience is designed to kick off a stay in Champagne, providing context before exploring the region the next day. Clos Corbier is located in Aÿ-Champagne, 10 minutes from Épernay, in the heart of the UNESCO World Heritage-listed hillsides.
